The meal begins with smooth cauliflower soup, followed by playful appetizers such as crispy scallop sushi and a dish with caviar. The main course is Omi duck from Shiga Prefecture (Course J) or Furuno beef tenderloin from Fukuoka Prefecture (Course G). The overlapping aromas and textures evoke the transition from autumn to winter.
The meal concludes with a refreshing dessert of black currant and shiso leaves, followed by a Mont Blanc with the scent of orange.
